Controlling Par Cans with external DMX

I Can "Trigger" Scenes and switchs with external DMX fror a Page of 80 PAR 64 lights and I can control the PAGE to Dim all the Pars with external DMX.
Question. With 80 par cans there are different scenes set and rather than just Trigger them can you DIM a scene or switch of some of the par cans. eg I just want to dim the Red lights down and Fade up the blue. I do NOT want to use preset Fade times on the scene but control them in real time with th external DMX board.
