According to your description, the MIDI control of the DMX output channels should work all the time, regardless of which windows you have open.

By default the output window shows the DMX output values of the selected page.
-Select DMX in the top left of the output window
-Select "Show DMX OUT Universes"
-You should now always see the channels being modified by the MIDI console regardless of the selected page

Let me know if it is still not working properly
